The Experience is where ONCE becomes a restaurant for the night. Chef Bonolo creates a twelve-course menu that moves through the full range of the kitchen, with each edition developed around its own ingredients, ideas and sense of place.
There is no permanent Experience menu and no fixed restaurant room. New editions are announced individually, with a limited number of seats released for each table. The experience exists for that evening, allowing the next one to begin from somewhere entirely new.
The Experience is not available through standard private booking. Upcoming dates are released to members first, who can sign in to discover the next edition and request a seat.
