Chef Bonolo

Chef Bonolo is the founder and chef behind ONCE and a graduate of Culinary Arts Academy Switzerland. His development has taken him through kitchens in South Africa and Europe, including Summerhill Guest Estate and a three-month internship at two-Michelin-starred Belcanto in Lisbon, where he further developed his approach to technique, precision and contemporary cooking.

Now based in Johannesburg, Bonolo is building ONCE across three distinct experiences: A Private Table, Supper Club and the upcoming ONCE Experience. His approach remains deliberately evolving, shaped by continued travel, new kitchens and an ongoing pursuit of learning from different food cultures around the world.

ONCE is where those experiences come together—a constantly developing expression of Bonolo’s cooking and approach to hospitality.
